Grandma's Northwest Apple Cake Recipe

Living in a resort community for 19 years has attracted family and friends to come visit. I love to cook and entertain, however because I work full time, I have had to come up with a few short cuts--especially when it comes to dessert. The Apple Cake mix from Canterbury Naturals is perfect for those occasions when I need a quick, tasty treat.

What you'll need:

1 box Apple Cake Mix
2 eggs
2 cups chopped apples (I prefer Fuji apples, unpeeled)
1 cup chopped walnuts

Grandma's Northwest Apple Cake Recipe

That's it! I know what you're thinking, "Where's the liquid?" The juicy apples will add all the needed moisture.

Preheat oven to 350 degrees. Combine all the ingredients and stir until blended. Spoon into an ungreased 8 x 8 baking dish. Bake for 45 - 55 minutes. Don't overbake!

Northwest Apple Cake

For a breakfast treat, I take 1 tablespoon of butter and spread it all over the top of the cake while the cake is still hot out of the oven, then I sprinkle it with cinnamon sugar. For a dessert, I let the cake cool, and serve it with vanilla ice cream drizzled with chocolate sauce. Easy and delicious!

Lucy, I chop the apples into roughly 1/2 inch squares. I think it’s nice to have the larger pieces of apples in the cake. I typically don’t even peel them, but if you have the time, peeling them is fine. Granny Smith apples would be good, they’d add some tartness. I use a Fuji apples, because I prefer the sweetness they provide. I hope this helps and that you enjoy the cake!

Please tell me what size, and shape, is it best for the chopped apple pieces to be, so that it bakes well? I’m an amateur baker and need some guidance. I’ve bought the Apple Cake mix, and it just says “chopped” tart apples. I was thinking of chopping them into even-sized one-quarter inch squares. But, the smaller, and more even, the pieces, the more time it would take to chop. Are Granny Smith apples the best choice for this ? Thanks.

I love the apple cake mix by Cadbury, but it is no longer available in my area (portland,or) or on Amazon. Please tell me where I can purchase it.
