The Mini Egg Pan from GreenPan: Perfect for Cooking for One!

We love getting feedback from our customers, and sometimes they are even kind enough to e-mail us with a review! She loves the Mini Egg Pan from GreenPan, and so do we!

Cooking for one can be challenging. I was given The Original Green Pan as a gift, and the first day I used it to fry an egg. I have to tell you, if I was being robbed I would part with my jewelry before I would part with my Green Pan! It's just the right size to fry an egg, one burger, or a couple sausages. The clean up makes the pan even better. Because of its size, it will store just about anywhere. It would make a wonderful gift for students who are going off to college, a stocking stuffer for Christmas or the perfect gift for anyone cooking for one!

Try this recipe for the perfect single serve breakfast!

Spinach and Bacon Frittata
makes enough for 4 Frittatas

4 slices bacon
1 cup fresh spinach
4 eggs
1/2 cup milk
1/2 cup cream
3/4 cup ricotta cheese

Preheat the oven to 400 degrees F. Heat the mini fry pan over medium heat and grease lightly. Add a slice of bacon and cook until crispy, about 4 minutes. Add a few spinach leaves and cook for another minute, or until wilted.

In a bowl, whisk the eggs, milk, cream, salt and pepper. Pour 1/4 of the mixture over the bacon and spinach. Top with 1/4 of the ricotta. Cook for about 5 minutes on low heat. 

Bake for another 5 minutes in the oven until slightly brown on top. Enjoy!

Save the egg mixture for use over the next few days! This recipe can easily be halved.
